Strawberry muffins, great for breakfast or a snack

Muffins are one of my favorite things to bake. There are so many great flavors to choose from that I never get bored of eating them. Strawberry muffins are great year round, although admittedly I prefer them in the summer when the strawberries are in season. That being said, it’s great to have that taste of summer during the dreary winter months. This is a recipe I found online a while back and have modified over time.

Preheat oven to 375 degrees. In a small bowl, combine the milk, oil, and eggs.

In a large bowl, mix together the flour, baking powder, salt, and sugar.

Toss in the strawberries, coating them in the flour mixture. Fresh or previously frozen strawberries can be used in this recipe.

Pour the liquid mixture into the flour mixture, adding in the vanilla extract, and stir thoroughly.

Fill muffin cups about 3/4 full. These muffins expand quite a bit while cooking, so you do not want to overfill the muffin trays.

Bake at 375 degrees for about 25 minutes. Cool for a few minutes before removing from the tray and placing on a cooling rack.

  • 5 cups flour
  • 3 cups chopped strawberries
  • 1 teaspoon salt
  • 1 Tablespoon vanilla extract

  1. Muffins are some of my favorite things to eat for breakfast or a quick snack. They’re so easy to grab and go. I’ve never made strawberries muffins, though, so I’m really looking forward to trying this! Thanks for sharing it!!

  2. These look delicious. I usually have a muffin with my protein shake in the morning but, I’ve never had a strawberry muffin. Next time strawberries are on sale ill have to give this a try.
