Rainbow chocolate chip cookies

As someone with a very large sweet tooth, baking is one of my favorite things to do in the kitchen. Having the chance to create a delicious dessert or sugary snack brings me so much joy. Never mind the fact that a few years ago I couldn’t cook at all. Cookies are a great easy to bake treat that satisfies my sweet tooth and doesn’t take too much time to make. Having tried and tweaked many chocolate chip cookie recipes, I finally created the perfect one. Not overly sweet yet still containing that perfect balance of flavor, these rainbow chocolate chip cookies have become a family favorite.

These cookies have the perfect balance between a soft chewy and a crunchy cookie that is sure to please everyone. Of course, if you want a softer or harder cookie then a simple adjustment to the baking time will give you the desired results.

For a change of flavor, try using white chocolate chips in these cookies. I have made them both ways and as a lover of white chocolate, I prefer to use white chocolate chips. The cookies will retain the same texture qualities while having that unique white chocolate flavor.

Ingredients

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/2 cups brown sugar, packed
  • 1 egg yolk
  • 1 egg
  • 1 Tbsp vanilla extract
  • 1 to 1 1/2 cups chocolate chips
  • 3-4 Tbsp rainbow sprinkles

Directions

  1. Preheat oven to 325 degrees. Line two baking sheets with silicone baking mats or parchment paper.
  2. Melt butter. Set aside and allow to cool until room temperature.
  3. In a large bowl, sift together flour, salt, and baking soda.
  4. In a medium bowl, mix together brown sugar and butter until creamy. Add in the vanilla, egg and egg yolk, and mix until well combined.
  5. Add the moist ingredients to the dry ingredients and stir. It will become stiff at first but after some stirring, it will become smoother.
  6. Stir in the chocolate chips and sprinkles.
  7. Scoop out about 2 Tablespoons worth of dough and roll into a ball. Place on the cookie sheet and flatten slightly.
  8. Bake for 12-14 minutes or until edges of cookie turn golden. If you want softer cookies, reduce cooking time. For crunchier cookies, add a few minutes to the cooking time. Fourteen minutes creates a soft cookie in the middle with a slightly crunchy edge.
