With the arrival of fall, everyone is keen to get busy baking. What better way to welcome the cooler weather than turning on your oven and baking up something delicious, especially if it features fall flavors. Like others, I had the hankering to bake and knew that it had to be an autumn related recipe. The craving for cookies was strong, so I knew I had to go that route. Add in some apples that needed to get used up and the obvious choice was cinnamon apple oatmeal cookies.
These cookies turned out to be a perfect balance of soft and firm, with a distinct apple cinnamon flavor. The oats made it taste like an apple crisp dessert. Needless to say, these cookies did not last long and will become a regular part of my fall and year-round baking.

Cinnamon apple oatmeal cookies
This recipe makes about 36 cookies, more if you make them smaller.
Ingredients
- 1 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup sugar
- 2 eggs
- 1 Tbsp vanilla extract
- 1 1/2 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 3 tsp cinnamon
- 1/2 tsp salt (optional)
- 3 1/4 cups oats, quick oats
or old fashioned oats
- 1 1/4 cups apple, finely chopped
Directions
- Preheat oven to 350.
- In a large bowl, beat butter and sugars together until creamy. Add eggs and vanilla, beat well.
- Add flour, baking powder and soda, cinnamon, and salt. Mix well.
- Add oats and apples. Mix well. The dough should be slightly sticky but not overly so. If it’s too sticky, add a bit more flour into the mix.
- Roll dough into balls, about the size of a goofball, and place on cookie sheet
. If you want more cookies, make the balls slightly smaller.
- Bake at 350 for 17-20 minutes.
- Cool on cookie sheet for a minute and then transfer to a wire rack to cool completely.

Yum! I eat an apple just about every day. Granny Smith apples are my all time favorite. These cookies look very tasty and easy. Looks like a fall recipe I definitely need to try.
I love Granny Smith apples as well though I think my favorite variety is Pink Lady. These cookies are a fantastic way to use up apples.
